The Women of FAUCHON: The Pastry Powerhouse Leading with Skill, Heart & Purpose
At FAUCHON Paris, NYC, the pastry program is shaped by three extraordinary women whose individual strengths create something far greater than the sum of its parts. Regional Pastry Chef Stephanie Oliveira, Executive Pastry Chef Victoria Mustacchio, and Sous Pastry Chef Vivian Tsan represent a powerful example of women leaders in an industry still largely dominated by men. Each brings a unique artistry and background, yet all three are united by their passion for pastry, their dedication to their craft, and the genuine care they have for their guests.
Though their paths began in different places, their stories intersect repeatedly. Stephanie and Victoria first worked side by side at Patisserie Chanson, establishing a mentorship that continued at L’Avenue at Saks, where they were later joined by Vivian. Now all three are together again at FAUCHON Paris, NYC with a shared history that formed a foundation of trust and collaboration that elevates their work every day.
The FAUCHON Paris, NYC, pastry team stands as a testament to the power of women in culinary. Together, Stephanie, Victoria, and Vivian represent what’s possible when women lead boldly and support one another’s growth. Stephanie’s leadership extends beyond the kitchen, having created a digital pastry community to unify chefs across R/A, and all three chefs are deeply connected to R/A’s Aptitude Potential Training (APT) program as coaches or graduates. Their continued support of rising culinary talent ensures that more women will have access to the training and confidence they themselves found through mentorship.
Each chef was asked to describe her journey at R/A in one word, revealing the heart behind their work:
Stephanie chose EXHILARATING, reflecting the energy and rapid growth of her career.
Victoria chose CARE, honoring the compassion and support she received from her R/A family.
Vivian chose CONNECTIONS, recognizing the relationships that shaped her path.
When asked what dish best represents them, their answers reflect their personalities and approach to pastry—Saks S’mores for Stephanie’s creative mastery, freshly-baked bread for Victoria’s depth and patience, and chocolate chip cookies for Vivian’s warmth beneath a composed exterior.
Stephanie, Victoria, and Vivian’s partnership embodies the spirit of Women’s History Month, R/A’s Culture of CARE, and the future of hospitality: collaborative, empowered, and continually raising the standard of excellence at FAUCHON Paris, NYC.
